Hey everyone! Now I know summer is not official for a couple more weeks but I couldn’t resist sharing these breakfast recipes! They are light, refreshing and loaded with summer fruits. I will have all the recipes below but this week I also made a VIDEO!! to go along with this post. If you’ve been following me for awhile, I normally post about twice a week but the past month and a bit has been very sporadic. I find myself creating recipes, taking photos and then never getting around to actually creating the blog post. I’ve just really not been into writing lately so I decided to make a video, because I still love sharing healthy recipes and everything nutrition related.
Let me know how you liked the video, I would really appreciate some feedback! I really enjoyed filming this, although staying in frame was a little challenging {as you may notice in the video:P}.

PrintAlmond Berry Overnight Oats

Description
Great healthy breakfast when you’re on-the-go! Crunchy & sweet!
Ingredients
- 1 cup oats
- 1 tbsp shredded almonds
- 1/4 cup almond milk
- 1 tbsp agave nectar
- Mixed berries of your choice {blueberries, raspberries, blackberries, strawberries}
Instructions
- Add all ingredients except berries to a mason jar, stir and place in the fridge overnight.
- In the morning top with berries and bring with you to work or school!

Dragon Fruit Smoothie
- Total Time: 5 mins

Description
Sweet and refreshing smoothie that is light but will keep you full!
Ingredients
- 1 dragon fruit
- 1 frozen banana
- 1/4 cup non fat greek yogurt
- 1 tbsp chia seeds
- 1 cup mixed berries
- Splash of orange juice
Instructions
- Add all ingredients to high speed blender until smooth consistency.
- Enjoy!

Mini Pancakes
- Total Time: 15 mins
- Yield: 4 1x
Description
4- ingredient mini pancakes that are quick, easy and filling!
Ingredients
- 1 banana
- 1/4 cup oats
- 2 eggs
- 1 tbsp chia seeds
- Fruit for topping
- Agave nectar {syrup}
Instructions
- Add all ingredients to blender until smooth consistency.
- Spray pan with non-stick cooking spray and pour batter onto pan {recipe will make 4 small pancakes}
- Once finished cooking, top with fresh fruit and agave nectar as syrup!
- Prep Time: 5 mins
- Cook Time: 10 mins
