I have been on a rice kick lately and I’ve been adding it to everything including salads! I absolutely love the combination of ingredients in the salad I am sharing today- arugula, long grain rice, red grapes and a simple dressing. It’s easy and makes a really good lunch that will keep you feeling full!
Brown Long Grain Rice
My favourite brand of rice is by Lundberg Family Farms. This is not minute rice – it will take 30-45 minutes to cook but it is so worth it. The quality of this rice is extremely good and it is totally organic, gluten-free and contains no other ingredients. It is more expensive than most rice brands but the quality is totally worth it and the bag will last you longer than you think!
Arugula
Arugula is a leafy green in the cruciferous vegetable family {aka Brassicaceae family that includes kale, cauliflower, broccoli, etc.}. Arugula is an excellent source of antioxidants, fibre, vitamin A, vitamin K, folate, calcium, iron and so much more. Arugula is sold at basically any grocery store near the spinach, kale and lettuce! Baby arugula is great as well – I love the Organic Girl Baby Arugula found at Safeway.

Ingredients
- 3 cups arugula
- 1 cup long grain rice, cooked {see packaging for accurate instructions}
- 1/2 cup red grapes, sliced
- 1/4 small red onion, sliced
- 3 tbsp cashews, chopped
- Black pepper
- Dressing
- 2 tbsp olive oil
- 1 tsp red wine vinegar
- Pinch of salt
Instructions
- Begin by combining all dressing ingredients together.
- Toss together arugula, rice, grapes, red onion and top with cashews and black pepper. Combine salad with dressing.
- Enjoy!
