Today I am sharing this really easy Avocado Bow Tie Pasta Salad! I like using bow tie pasta in this recipe because it gives it a bit of a different look. I used whole grain bow tie pasta as that was the only kind I could find {besides white bow tie pasta} at the grocery store. If you are gluten-free, you can use any type of gluten-free pasta {macaroni, rotini, etc.} unless you are able to find a GF bow tie pasta! The majority of the other ingredients are plant-based including tomatoes, cucumbers, lettuce and avocado! The dressing is simply avocado, salt and pepper for a creamy texture.

Whole Grain Bow Tie Pasta | Nutrients will vary a bit depending on brand but overall whole grain pasta is a good source of fibre, protein and normally enriched with folate, iron, niacin and thiamine {B vitamins}.
Avocado | One avocado is an excellent source of unsaturated fats {the healthy fats}, potassium, vitamin C, vitamin B6, magnesium and tons of antioxidants!

Description
Avocado Bow Tie Pasta Salad is easy, vegan and delicious! It is a great summer recipe that can be enjoyed for lunch or brought to a BBQ!
Ingredients
- 2 cups uncooked bow tie pasta salad {whole grain}
- 1 small cucumber, sliced
- 2 cup lettuce, chopped
- 1 tomato, sliced
- 1 avocado
- 1 tsp salt
- 1 tsp pepper
Instructions
- Begin by cooking the bow tie pasta as per the instructions.
- Once pasta is finished cooking, rinse pasta under cold water.
- In a small bowl, mash 1 avocado and mix in salt and pepper
- In a large bowl. combine pasta, vegetables and avocado mix and gently mix.
- Enjoy!
