IT’S TACO TIME!
Who doesn’t love a good taco? And a BREAKFAST taco?! Count me in.
Potatoes, eggs and lots of veggies all loaded into a whole grain tortilla!
This recipe is great to make on the weekends when you have a bit of extra time to make a nice breakfast. I also really love it at dinnertime. It takes approximately 30 minutes total to make, which I think is pretty quick for a delicious healthy meal!
If you are vegan or are looking for a vegan alternative, swap the eggs for tofu. I do that many times and it’s super delicious!
The toppings for these tacos are endless. From salsa to a simple avocado mash, it really takes these tacos to another level!
Before frying the potatoes, I like to boil them for about 10 minutes to really soften them. Then I add them to a frying pan with onion, garlic and spices.
In the meantime I scramble a couple eggs in a separate pan {although you could totally throw them into the same pan}.
Then load up your taco with the potatoes, eggs and endless veggies! The more veggies the better in my opinion!

Description
Healthy Breakfast Tacos are the best way to start off the weekend! Loaded with fibre, good carbs, vegetables and flavour! Top with mashed avocado or salsa!
Ingredients
- 2 cups sliced small potatoes {or chop yellow potatoes}
- 3 tbsp olive oil
- 1/4 small onion, sliced
- 1 garlic clove, minced
- 1 tsp salt
- 1 tsp back pepper
- 1 tsp dried oregano
- 1 tbsp chili powder
- 2 eggs
- 3 whole wheat tortilla wraps
- Toppings:
- Handful of spinach
- 1 tomato, chopped
- 1/4 cup green onion, chopped
- Salsa {I like Neal Brothers Salsa}
- Mashed Avocado
- 1 avocado, skin removed and pitted
- 1 tsp lemon juice
- Dash of black pepper
Instructions
- Begin by boiling potatoes for about 10 minutes until they have softened.
- In a large frying pan, add 2 tbsp olive oil, potatoes, sliced onion, garlic, salt, pepper, dried oregano and chili powder.
- In a smaller frying pan, scramble 2 eggs with 1 tbsp olive oil
- Fill tortilla shells with potato, eggs and top with spinach, tomato and green onion.
- Mashed Avocado: Mash all ingredients together in a small bowl.
- Top the filled tortillas with either mashed avocado OR salsa!
- Enjoy!
