Happy Saturday! Hope you all are having a great start to the weekend! I went to cycle class this morning so I am feeling energized for the day! I normally don’t post on the weekend but I had a pretty busy week so better late than never right?! :)
A couple weeks ago I found a bag of dates in my cupboard that I totally forgot I had. I bought them around Christmas to try making these No-Bake Salted Caramel Cups. They turned out delicious however I wasn’t patient enough to carefully do each step so they didn’t come out as nice as Lindsay’s so I didn’t end up making any more for any holiday events. So with the extra dates I thought about making a dessert, which dates are great for because they have a gooey consistency. One thing led to another and dessert turned into chewy homemade granola! I have been loving this recipe lately for breakfast! It’s so easy to make, I simply throw all ingredients into a small food processor and chop for a couple pulses! If you don’t have a food processor you can use a blender. Just blend for about 30 seconds so everything comes together but still chunky.
You can also make this recipe ahead of time and store it in the fridge. In the morning simply top with toppings of your choice!

Ingredients
- 11 small dates, pitted
- 1/2 cup rolled oats
- 1/2 banana
- 1 tbsp hemp seeds
- 1 tsp cinnamon
- Toppings
- 1/2 banana (other half)
- Apple slices
- Cranberries
- or anything you’d like!
Instructions
- In a food processor, pulse together all ingredients until everything starts to stick together (approx. 8-10 pulses).
- Remove from food processor and add to a mason jar.
- Enjoy right away (add toppings!) or add to the refrigerator and enjoy later! Good for 2 days!
