Quick post today! I want to share a kale and chickpea salad with a classic red wine vinegar dressing. Kale and chickpea salads are a common pre-made salad found at grocery stores and so on. These are great if you are looking for something healthy while on the go. But today I wanted to share a recipe that you can make at home! It’s simple ingredients with a very easy red wine vinegar dressing. I love this recipe especially in the winter time because it is full of vibrant colours!

Ingredients
- 1 cup quinoa (I used rainbow quinoa)
- 2 cups vegetable broth
- 2 cups kale, chopped
- 1/2 cup carrots, cut julienned
- 1 tomato, chopped
- 1/4 cup zucchini, chopped
- 1 cup chickpeas
- 1/4 cup cilantro, chopped
- 1/4 cup parsley, chopped
- Red Wine Vinegar Dressing
- 3 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp lemon juice
- Pinch of salt
Instructions
- Begin by bringing quinoa and vegetable broth to a boil. Them lower to a simmer and cover for about 20 minutes.
- In the meantime, add all salad ingredients (except dressing) to a large bowl.
- In a small container with a lid, add all dressing ingredients and give it a good shake.
- When quinoa is done, add it to the other ingredients and then top with dressing and gently combine everything.
- Enjoy!
