Today is the first day of summer, so I think it is appropriate to share a super easy, summery Coconut Pineapple Popsicle recipe! These popsicles are sweet and refreshing. They are also a healthy dessert option because they do not contain any processed sugars. These popsicles are made out of coconut water and pineapple! There is also the optional ingredient of adding coconut sugar or another sweetener {honey, agave – vegan option}. I personally like to add a sweetener because depending on the pineapple it might have a bit of a bitterness to it. The sweetener totally eliminates that taste! The coconut water also provides a hint of coconut flavour. If coconut is not your thing, you could totally just use regular water for a pure pineapple taste!

For the popsicle molds, I like to use the popsicle mold below from Amazon. I like the classic popsicle shape that they give and the quality of this product is really good. To get the popsicles to come out smoothly simply run the frozen mold under warm water for about a minute, then pull them out.

Ingredients
- 1 pineapple
- 1/2 cup coconut water
- 2 tbsp sweetener coconut sugar, agave or honey {option}
Instructions
- Add all ingredients to a high speed blender and blend until smooth consistency is reached
- Pour pineapple mixture into popsicle molds and freeze for at least 5 hours until frozen
- Remove from mold and enjoy!
