Happy Valentine’s Day
With Valentine’s Day on the weekend, I wanted to share a super easy recipe. This coconut whip cream recipe is perfect for Valentine’s Day because it has a red/pink tint to it and can be topped on a variety of breakfast foods. Unlike regular whip cream, this recipe is dairy-free and contains lots of healthy fats. The main ingredient in this recipe is coconut milk, which is high in fat BUT this type of fat {MCT- Medium Chain Triglycerides} is easily broken down in the body compared to other fats. It is also a lot easier on the digestive tract making coconut milk a great dairy-free alternative to those who do not consume dairy.
Coconut milk has a firm consistency when chilled, and softens at room temperature. Therefore I recommend eating it right away, or make it and store it in the fridge (up to 3 days!).
What to top it on:
- Fruit {strawberries or any kind of berry!}
- Pancakes
- Waffles
- Hot Chocolate
- Muffin or Cake!
Coconut Whip Cream [Valentine’s Day Edition]
- Yield: 2 cups 1x
Description
This sweet, light and creamy whip cream is perfect to top on fruit, pancakes, waffles and more! Perfect for Valentine’s Day!
Ingredients
- 1 can (400g) full-fat coconut milk
- 1 tablespoon of maple syrup
- 1 teaspoon vanilla extract (optional)
- 13 strawberries
- 1/8 cup of water
Instructions
- Chill the can of coconut milk overnight.
- Flip can upside down, open with can opener and pour out the coconut water (we will not be using this).
- Add the coconut cream to a medium size bowl, add the maple syrup and vanilla.
- Using an electric beater, lightly beat until mixture until fluffy (about 30 seconds).
- In a blender, combine strawberries (remove stem) and water.
- Blend until a liquid consistency is reached.
- Add the liquid strawberry mix to the coconut whip cream and lightly beat until the coconut whip cream is a light red colour.
- Top right away onto fruit or pancakes OR refrigerate until ready to use.
Notes
Coconut whip cream will firm in the fridge and soften at room temperature.
Add less of the strawberry mixture if you prefer a more fluffy whip cream consisitency.
