Happy Monday everyone!
Today I wanted to share a quick post on a very versatile recipe. This dish is meatless making it perfect for #meatlessmonday! It can be eaten as a dip with tortilla chips, crackers or in a lettuce wrap/tortilla shell. This Corn & Bean Dip can be made at the beginning of the week and portioned out throughout the week.
Nutrition
This recipe is a great example of a meatless dish that has protein, iron, vitamin B12 & many more nutrients.
Black Beans// Great source of fibre, iron and protein.
Quinoa// Another great source of protein! More about quinoa here.
Nutritional Yeast// I love nutritional yeast because it can be sprinkled on pretty much anything and it also tastes like cheese! It is an excellent source of Vitamin B12 as well as many other vitamins and minerals.
The recipe

Description
Quick & Easy dish to bring to a gathering or enjoy for lunch!
Ingredients
- 1 cup corn
- 1 cup black beans
- 1 cup quinoa, cooked
- 1/2 cucumber, chopped small
- 1 tomatoes, diced small
- 1/2 cup green onion, chopped
- 1 tbsp olive oil
- 1/2 tbsp garlic powder
- 1/4 cup lemon juice
- Drizzel with lime juice
- Sprinkle with Nutritional Yeast
Instructions
- Combine black beans, corn, quinoa and vegetables in a bowl.
- In a separate bowl wisk together oil, lemon juice, garlic powder and lime juice.
- Drizzel dressing over black bean/corn dish then sprinkel with nutritial yeast.
- Enjoy!
