Salad and french fries are one of my favorite combinations and I thought what better than guacamole to top it all off! Today, I will be sharing two recipes- herb & garlic french fries and a creamy guacamole recipe. When we think of french fries, nutrition normally doesn’t come to mind. This is because they are normally deep fried, loaded with salt, oils and more. These herb & garlic french fries on the other hand contain minimal ingredients and they are baked!
Guacamole// Originally a Mexican dish, guacamole is a spread made from mashing avocados until you reach a creamy texture. Heaps of vegetables and herbs are added like onion, garlic, cilantro, tomatoes and lime juice and enjoyed with tortilla chips, fajitas, enchiladas and more. I’ve had so many amazing guacamole dishes, you really can’t go wrong. Check out my guac recipe below.

Herb & Garlic French Fries
I like using russet potatoes for this recipe because they get very crispy when baked. These potatoes are packed with potassium which is involved in muscle contraction, nerve impulse transmission, maintaining electrolyte and pH balance; vitamin C that is essential in collagen formation and fights free radicals; iron that is part of heme in hemoglobin of RBC, part of heme in myoglobin of muscle, part of many enzymes, transport and storage proteins; magnesium that activates many enzymes, part of bones and teeth, muscle contraction, influences potassium in cells and so many more nutrients!
For the seasoning I chose to use Herb & Garlic Seasoning from Mrs. Dash. I really like their seasonings because they are salt free and free of MSG.
Guacamole
The main ingredient in guacamole is avocado! Avocados are definitely a superfood in my books as they contain 7g of fibre, 2 g protein, 16g of healthy fats {in half an avocado}, great source of vitamin K that is involved in blood clotting; vitamin E which helps fight free radicals {helps the skin looking young!}, and helps protect vitamins A & C which can easily be oxidized; vitamin C, vitamin B6 which has role in metabolism and protein metabolism; folate that has a role in metabolism, DNA & RNA synthesis, amino acid conversion, important in rapidly growing cells {RBC, during pregnancy}, potassium; and much more!
How to use Guacamole
This recipe stores great for up to a week in the fridge. It is great as a dip/spread with french fries, crackers, toasted whole grain tortillas, and vegetables. It also tastes great topped on salads, fajitas, and enchiladas.

Description
Crispy herb & garlic french fries that will leave you feeling energized!
Ingredients
- 1 russet potato
- 1 tbsp olive oil
- 1 tbsp Mrs. Dash Herb & Garlic Seasoning
- Dash of sea salt (optional)
- Double or triple the recipe as needed.
Instructions
- Preheat oven 350F degrees
- Wash and slice potato into small french fries or wedges
- Add sliced potatoes olive oil, seasoning and sea salt to plastic bag and give it a good shake
- Lay potatoes on a baking sheet with parchment paper being sure potatoes are not touching each other
- Bake for 15 minutes then flip them on the other side for another 20 minutes
- Remove from oven and enjoy!

Creamy Guacamole

Creamy guac recipe that can be used as a dip, salad topper and more!
Ingredients
- 2 avocados, mashed
- 1/2 red onion, diced
- 1 garlic clove, diced
- 1 tbsp jalapeño, diced
- Handful of cherry tomatoes, diced
- 1/2 lemon, juiced
- 1/2 lime, juiced
- Dash of sea salt
Instructions
- Mash avocados until creamy
- Stir in all remaining ingredients
- Let chill for up to 1 hour or serve immediately
- Enjoy!
