With American Thanksgiving coming up this week and the Christmas holidays coming up soon, I thought it would be fun to share some healthy holiday recipe ideas. I have made this carrot recipe many times with a variety of carrots {baby carrots, colourful carrots, etc.} and they always turn out great. I purchased regular carrots with the stems still on them specifically for this recipe because it gives the dish a nice presentation with about an inch of the stem still on the carrot. This recipe is a side dish that everyone will enjoy and great if you have guests over with certain dietary restrictions {recipe is vegan, vegetarian, gluten-free, and dairy-free}. Pair this side dish with mashed potatoes and a protein and you are all set!

Description
Holiday Garlic Roasted Carrots Recipe makes the perfect healthy side to any dish! Keep the stems on the carrots gives this dish a nice presentation.
Ingredients
- 2 bunches of carrots with stems (approximately 12 carrots)
- 2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 3 garlic cloves, minced
- 1 tsp. dried thyme
- 1 tsp. oregano leaves
- 1 tsp. salt
- 1 tsp. black pepper
Instructions
- Preheat oven to 400 degrees F.
- Begin by cutting the stems off the carrots, leaving about 1 inch of the stem still on the carrot.
- Wash and peel carrots, then lay them on a baking dish lined with aluminum foil.
- Add all remaining ingredients to a small bowl, stir then drizzle onto carrots and coat evenly.
- Add carrots to oven for approximately 35-45 minutes until carrots are soft enough that you can easily poke with a fork.
- Remove from oven and serve immediately.
- Enjoy!
