Who doesn’t love a good pasta salad?!
They are easy to make, full of colour and this recipe is packed with nutrients!
This Italian Pasta Salad is used with brown rice fusilli pasta {or use any brown rice spiral pasta}. Brown rice pasta is made from brown rice instead of wheat making it a great option for those who are gluten-free. Brown rice is also a MUCH better option than white pasta {not healthy at all.} and provides fibre, carbohydrates and a bit of protein. Brown rice pasta is also a good source of vitamins B1 and B3. This pasta is a great alternative for those who do not like the texture of whole wheat pasta as brown rice pasta is not as gritty.
This recipe is also loaded with vegetables and light fresh Italian dressing. Perfect recipe to bring to a summer potluck or pool party!

Description
Light and refreshing Italian Pasta Salad that makes a great side or dish for a potluck or party!
Ingredients
- Pasta
- 3 cups fusilli brown rice pasta
- 1/2 cup carrots, shredded
- 1/4 cup celery, chopped
- 1/4 cup cherry tomatoes, sliced
- 1/4 cup broccoli, chopped very small
- 1/4 cup red onion, chopped
- Italian Dressing
- 3 tbsp red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 tsp oregano leaves
- 1 tsp garlic powder
- 1 tsp coconut sugar {or use honey}
Instructions
- Begin cooking pasta in boiling water for about 20 minutes.
- Once cooked, drain and add to a large bowl.
- Add the remaining pasta ingredients to the bowl and stir
- Dressing
- Combine all Italian Dressing ingredients into a small bowl and whisk well.
- Dress pasta salad with Italian dressing and store in the fridge for about 10-15 minutes {or longer} so that the dressing can soak into the pasta.
