Hi everyone! I want to share with you all today a super easy salad that I have been enjoying almost everyday for the past week. It’s filled with veggies, black quinoa and kale! This salad is perfect for making on the weekends and storing it in an airtight container to enjoy throughout the week.
Nutrition
Kale has so many wonderful health benefits as it is high in vitamins A, C, K. It is also a great source of potassium, copper, iron and phosphorus. Research shows that the antioxidant and fibre levels in kale has been linked to lowering cholesterol. All in all kale is packed with nutrients and is a super delicious green! Black quinoa is very similar to regular (white) quinoa but it has a sweeter taste and needs a little more water when cooking. I like adding it to my salads for a boost in protein as quinoa is a complete protein, meaning it has all essential amino acids to build proteins.

Description
This salad is packed with protein, fibre, nutrients and also tastes great.
Ingredients
- 1/2 cup black quinoa
- 1 cup water
- 5 cherry tomatoes, sliced in half
- 1 yellow bell pepper, chopped
- 1 orange bell pepper, chopped
- 1/2 cucumber, sliced
- 1 tbsp olive oil
- 1 lemon, juiced
Instructions
- Add quinoa to boiling water then let simmer, cover and stir occasionally
- In meantime, cut up vegetables
- Once quinoa has soaked up all the water, remove from heat and place in bowl
- Top with vegetable, olive oil, lemon juice and mix well
- Enjoy!
