Fully Loaded Greek Chicken Salad Pizza for the Win!??
Not your typical pizza – this dish is loaded with vegetables, yet still filling and flavourful. Making a “salad pizza” is a great way to get in those vegetables and perfect for those who prefer not to eat salads. The base (tortilla shell and pizza sauce) should be placed in the oven for about 5-10 minutes to warm up the tortilla wrap. Then, in a bowl mix together the salad, dressing included and then place on the pizza! This recipe is a little messy but makes a great balanced dinner or lunch! This recipe is dairy-free and can easily be gluten-free by choosing GF tortilla!

Description
Loaded Greek Chicken Salad Pizza is the perfect healthy dinner! Get in those veggies with every bite!
Ingredients
- Chicken – batch cook and keep extras in the fridge!
- 1 chicken breast
- 1 tsp olive oil
- Pinch of garlic powder
- Pinch of paprika
- Pizza Base
- 1 regular size whole grain tortilla wrap
- 1/4 cup pizza sauce [choose a brand with minimal ingredients or make your own!]
- Greek Salad
- 2 cup romaine lettuce, chopped
- 1/2 cup english cucumber, diced
- 1/4 of a red onion, sliced
- 1/2 red bell pepper, chopped
- 4 cocktail tomatoes, sliced
- 5 kalamata olives, pitted
- 1/2 avocado
- 3 tbsp Primal Kitchen Greek Salad Dressing
Instructions
- Preheat oven to 350 degrees F
- In a glass baking dish, coat chicken with olive oil, then sprinkle with garlic powder and paprika
- Place in oven for 30 minutes (turning over after 15 minutes)
- Pizza Base
- Place tortilla wrap on a baking sheet and spread with pizza sauce
- Place in oven for about 5 minutes (to warm it up and to harden the tortilla wrap a bit)
- Greek Salad
- Combine all greek salad ingredients and mix together
- Once chicken is finished cooking, let cool for about 5 minutes, then cut into bite size pieces
- Add chicken to greek salad and mix
- Putting it together
- Remove tortilla wrap from oven and place greek salad on top
- Press salad down onto pizza
- Using a pizza slicer, slice pizza into 6 slices.
