As you may have noticed, it has been a long time since my last post! I have not been too inspired the past couple months to share any new recipes or even photograph any meals. I think my main issue was trying to find a good place in my apartment that had good lighting to take pictures. Lighting makes a world of a difference when taking photos and I just could not get it right. After trying many different places around my apartment, I think I finally found a good spot with enough natural lighting. I’ve arranged it so I can have this set up at all times so I don’t need to be rearranging my apartment ever time I want to photograph a recipe. I used to drag my coffee table, a chair to stand on, and bring all my photography equipment into my (small) kitchen, which I was never motivated to do.
Now with a desk set up in my kitchen, I can easily take a couple shots without destroying my whole apartment. This has motivated me to get back into blogging and creating recipes. I have a few ideas in the works so hopefully I won’t go three months without blogging anytime soon!
Today I wanted to share a quick recipe that is perfect for busy mornings. These mini egg bites are packed with protein and vegetables to get your day started. You can make them on the weekend, freeze them and then simply reheat when you want to eat them. Perfect for on the go or to bring with you to work/school. This is a super simple recipe so feel free to customize it to your liking!
Protein
1 egg has about 6 grams of protein, 4 grams coming from the egg white.
If you ever wondered how much protein you should be consuming, a general rule is 0.8g of protein per kg (body weight) per day.
For example: Calculation for a 130 lbs woman:
Pounds divided by kg (2.2 conversion): 130/2.2= 59 kg
59*0.8= 47.2 grams of protein per day
Considering the size of an egg, 6 grams of protein are great! For comparison, 3 oz. of chicken contains approximately 20g of protein.
Overall, eggs are a healthy way to start your morning!

Description
Give your breakfast an extra boost of protein with these mini egg bites! Simple base recipe allows you to customize with whatever veggies or other protein you have on hand!
Ingredients
- 4 eggs
- Pinch of salt
- 1/2 small tomato, chopped finely
- 1/4 bell pepper, chopped finely
- 4 tbsp cucumber, chopped finely
- 2 tbsp spinach, chopped
Instructions
- Preheat oven to 350 degrees F and spray mini muffin pan with nonstick spray.
- Crack eggs into large measuring cup along with a pinch of salt and whisk together. Pour eggs into muffin pan, distributing evenly (leaving a little room at the top to add vegetables).
- Add the vegetables evenly to the eggs.
- Place in oven for approximately 10-12 minutes.
- Enjoy right away or store in freezer.
Notes
- Use whatever veggie you have on hand. Chopped turkey bacon also tastes delicious with this simple recipe!
- Store bites in the freezer than reheat in microwave for a quick breakfast.

Hi Courtney! They will only need about a minute and a half in the microwave! If storing in the fridge it’s about 2-3 days!
