Who knew eating “ice cream” for breakfast could be a healthy option!? Blending frozen bananas gives the consistency and texture similar to ice cream without any dairy and unhealthy fats. This recipe is perfect for vegans, those who are lactose intolerant and anyone wanting a healthy dessert idea (that you could also eat for breakfast!).
This recipe tastes similar to vanilla ice cream but with a hint of peanut butter. It also tastes great topped with dark chocolate chips and/or walnuts!
Peanut Butter Vegan Ice Cream

Vegan peanut butter ice cream that you can enjoy as a dessert or even for breakfast!
Ingredients
- 2 bananas, frozen
- 1 tbsp of natural peanut butter
- 1/4 almond milk, unsweetened
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- Raspberries for toppings (dark chocolate and crushed walnuts taste great too!)
Instructions
- Place all ingredients (except toppings) into high speed blender until creamy ice cream consistency is reached
- Add toppings, and enjoy!
