Tabbouleh is a Middle Eastern dish that traditionally is made up of bulgur, tomatoes, mint, parsley, and onion topped with a simple lemon dressing {lemon juice, olive oil and salt}. It is a great vegetarian option at many restaurants, which is actually where I got this recipe inspiration from. Recently, I was at a restaurant in Winnipeg called Smith {restaurant at Inn at the Forks} and ordered their Quinoa Tabbouleh {we also got a side of the truffle oil fries and their mac and cheese which are both wonderful, FYI}. I had heard of Tabbouleh but never thought to use quinoa in place of bulgur {bulgur is a common wheat ingredient in many Middle Eastern dishes}. Along with the quinoa, Smith also had crispy chickpeas in their dish which added a crunchy texture. I actually opted to use fresh chickpeas in my recipe as I prefer the softer texture of chickpeas in this recipe.
For the dressing, I am keeping it simple and traditional. Three ingredients: olive oil, lemon juice and salt.
I absolutely love how easy and nourishing this recipe is. It makes perfect leftovers to bring to the office or school for lunch.

Description
Quinoa Tabbouleh is a great dish for vegetarians or vegan as it is loaded with plant-based protein and loaded with flavour!
Ingredients
- 2 cups quinoa
- 4 cups water
- 1/2 cup spinach
- 1 cup chickpeas
- 1 small cucumber, sliced into fourths
- 1/2 cup cherry tomatoes, sliced
- 1 tbsp chopped parsely
- 1 tbsp chopped mint
- Dressing
- 3 tbsp olive oil
- Juice from 1 lemon
- Pinch of salt
Instructions
- Begin by bringing quinoa and water to a boil {while water is coming to a boil, steam spinach over this water to soften the spinach, this will only take 1-2 minutes}
- Once water is boiling, remove the steamer {spinach should have softened} then cover quinoa and bring to a simmer for approximately 20 minutes.
- After 20 minutes, all water should be gone and quinoa should be soft.
- Place quinoa in a bowl and let cool.
- Combine dressing ingredients in a small dish and then pour dressing over quinoa.
- Then add all remaining ingredients to the bowl {spinach, chickpeas, cucumber, cherry tomatoes, parsley and mint}.
- Gently combine all ingredients and enjoy!
