Who doesn’t love a parfait for breakfast?!
I love a good parfait for many reasons. They always seem to look so delicious and fancy but honestly take about 2 minutes to put together {with the exception of making the granola, which can easily be batch cooked on the weekend}. They are a filling enough to eat for breakfast and contain protein {from the greek yogurt and chia seeds}, healthy fats {from the nuts}, lots of vitamins, nutrients and antioxidants from the fruit!
The Granola
Granola is a great recipe to make on the weekend and eat throughout the week. It stores well in a mason jar or any container with a tight lid. For this granola recipe, I wanted bigger chunks of granola so instead of spreading the granola out on a baking dish to bake {like in this recipe}, I firmly packed the granola together {see two pictures down}. This is not necessary but it will give you bigger chunks of granola!

Bake this sweet granola on the weekend so you can enjoy this super easy and fancy breakfast throughout the week! Takes less than 2 minutes to put together!
Ingredients
- 1 1/2 cups oats
- 1/4 cup dried cranberries
- 1/4 cup almonds, chopped
- 1/4 cup walnuts, chopped
- 2 tbsp chia seeds
- 2 tbsp coconut sugar
- 3 tbsp coconut oil, melted
- 1 tbsp honey
- 1 tsp vanilla extract
- Vanilla non fat greek yogurt {I suggest to use about 1/2 cup per serving}
- Fruit: raspberries, blueberries and blackberries
Instructions
- Line a baking sheet with parchment paper and preheat over to 350 degrees F.
- In a large bowl combine oats, cranberries, almonds, walnuts, chia seeds, coconut sugar and top with coconut oil, honey and vanilla extract.
- Lay granola on baking sheet and firmly press granola together so there is a cluster in the middle of the baking sheet.
- Bake for 20 minutes.
- Once granola is done, let cool and break apart larger clusters of granola. Store in air tight container or enjoy right away!
- To make parfait, simply layer granola, greek yogurt, fruit and repeat as many times as you would like!
- Enjoy!

Granola makes about 4 cups of granola.
