Today I want to share with you one of my go-to dinners that can be made in 10 minutes. Toast topped with mashed avocado, sliced tomatoes and poached eggs sprinkled with ground pepper and basil. It’s quick, simple and very nutritious! Eggs are an excellent (eggcellent :P) source of protein, vitamin D, vitamin B12 and more. You will definitely feel fueled for the evening after this dinner! I like to add avocado and tomato because it is one of my favorite fruit combinations. Feel free to add any veggies you wish! In this recipe I like to poach the eggs but however you like to cook your eggs would go great with this recipe. For the bread, I highly recommend Silver Hill Sprouted Grains (any type) for maximum nutrition!

Ingredients
- 2 pieces of toast
- 2 eggs
- 1 avocado, mashed
- 1–2 tomatoes, sliced
- Dash of pepper (optional)
- Chopped basil (optional)
Instructions
- Begin by cooking the eggs. If you are poaching your eggs and do not have a fancy egg poaching gadget, bring water in a saucepan to a boil then to a simmer.
- Slowly add the egg to the simmering water and leave it in the water for about 3 minutes (if you prefer a more runny egg- leave it in the water for less time).
- Remove the egg from water, pat dry and repeat for the process for the second egg.
- In the meantime, mash an avocado and place on toast with sliced tomatoes.
- Once the second egg is done, add egg to toast and sprinkle with ground pepper and basil.
- Enjoy!
