Okay so first off I really need to work on my decorating skills but I couldn’t wait to post this Spelt Sugar Cookie recipe! So bare with me in the above picture…haha
These cookies are hard enough on the outside to decorate yet chewy on the inside! It was a miracle I managed to make this recipe work since I am definitely not a baker! Almond meal is one of eight ingredients in this recipe and it provides a moist and buttery flavours to these cookies. Almond meal is gluten-free however this recipe is not gluten-free since it includes spelt flour! I love swapping flours for spelt flour because it has a nutty flavour and is a great source of fibre!
I purchased these super cute copper cookie cutters from Safeway a couple weeks ago and I can’t stop using them! I am making mini pizzas for friends on Friday night and I am totally using these festive cookie cutters!
Also who doesn’t love a good marble rolling pin! I believe this was from Superstore.
I made a couple simple round balls so that you can get a good idea of the soft, buttery texture on the inside.

Description
Spelt Sugar Cookies are the way to go this holiday season! Super easy and fun recipe to make!
Ingredients
- 3/4 cup spelt flour
- 3/4 cup almond meal
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup cane sugar
- 1 egg
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- Begin by combining spelt flour, almond meal, baking powder, baking soda and cane sugar in one bowl.
- In a second bowl combine egg, coconut oil and vanilla.
- Slowly add dry ingredients to wet ingredients while continuously stirring.
- Sprinkle flour on a clean surface and roll dough out with a rolling pin.
- Using festive cookie cutters, cut out cookies and place on a baking sheet that is lightly greased {I used coconut oil spray}
- Place baking sheet in oven for 10 minutes.
- Remove from oven, let cool for about 10 minutes then begin to decorate if desired!
- Enjoy!

These were great! Texture was perfect for using with a cookie cutter. I added a pinch of salt (just a personal preference) and cut them into heart shapes for my son’s preschool Valentine’s Day party. They were a hit! 😊
