Hope you’re all having a wonderful Wednesday! Today, I am sharing with you my favorite summer salad. I absolutely love kale and all of the benefits this green vegetable has! Kale is a cruciferous, dark leafy vegetable with a bitter taste unless massaged or cooked. This salad is SO easy and quick to make; I bet I could cut everything up and be ready to eat it in the time someone was ordering fast food through a drive-thru… THIS IS SALAD IS FAST FOOD!!
How to massage kale // Rub handfuls of chiffonade kale together. After a few minutes you will notice the kale start to turn a darker colour and the leaves will soften.
Nutrition
Kale // High in vitamins A, C, K. Also a great source of potassium, copper, iron and phosphorus. The antioxidant and fibre content in kale has been linked to lowering cholesterol levels and reducing the risk for cardiovascular disease. It’s safe to say that kale is a powerhouse for nutrients and is so good for your body!
Chickpeas // Chickpeas are a great source of protein and iron. They are so versatile and I absolutely love adding them to my salads. Chickpeas are also high in fibre and manganese.

Description
Summer kale salad perfect to enjoy on the deck with friends!
Ingredients
- 5 leaves of kale, massaged
- 1 cup chickpeas
- 1 cucumber, sliced
- 1 apple, chopped
- 1 red bell pepper, chopped
- 1/4 red onion, sliced
- 1 lemon, juiced
Instructions
- Add all ingredients to salad bowl and top with lemon juice, enjoy!

I’ve never heard of massaging kale, but now I want to give it a try right away! I just love kale salads, but sometimes think the leaves can be too “tough”. I usually toss the leaves in the dressing and let it sit for about 30 minutes, but this method should be much faster. This salad sounds delicious!
