Good morning everyone! What a weird week it has been! I graduated from university this past May so it’s my first time not going back to school, which has been a weird feeling. Seeing all the students catch the bus to go to uni makes me miss going to school– not the work and exams but just seeing all my uni friends and profs! It has also been a very busy week because I am leaving on a trip next week so I have been pretty busy planning, booking hotels and tickets with that. I am also going to make it a point to go and visit for the first time…Whole Foods! Yes, I have never been! Since I will be in the southern states I am also excited to try some new fruits and veggies that are not available to me here (or they are but in really bad shape). If anyone has any recommendations for restaurants/things to do in Houston, San Antonio, Baton Rouge, New Orleans or Nashville let me know! :)
Although it’s been a busy week, I’ve made it a point to try some new recipes and take pictures for “What I ate Wednesday” post. I have to say; this is probably the best one so far as the meals I prepared were pretty delicious!
All right, let’s get on with it!
Breakfast
I started my morning off with a smoothie using some leftover produce I had in the fridge. Normally I would try and add some greens to my morning smoothie but I didn’t have any unfortunately.
Ingredients: 2 bananas, 1/4 pineapple, handful of raspberries and blackberries, hemp seeds, and acai berry powder (from 1 capsule of Organic Burst Acai Berry). I am working on a full review post of the products from Organic Burst so for now just know that I love the acai berry tablets! It comes in a capsule but you can easily pull it apart and pour in the powder into your blender to make a smoothie.
Lunch
Kale & chickpeas are one of my favorite combinations and I try to eat them on a daily basis as they have so many nutrients. Kale is packed with so many wonderful things, read more about the health benefits of kale here. Chickpeas are a food that I can eat like most people eat chips, once you eat one, you can’t stop!
This salad has kale, broccoli, bussels sprouts, chicory, cabbage, chickpeas, dried can berries and roasted pumpkin seeds. The dressing is a mix of olive oil and lemon juice. Simple and delicious!
I made my own Starbucks drink at home using Passion Tazo Tea I purchased from Starbuck. Make the tea as normal, and once it has cooled a bit, get a glass filled with ice and add the hot tea. Add more ice as needed and voila! You’ve made your own Starbucks drink! It’s super tasty! Add stevia to sweeten if desired!
Dinner
For dinner I ate some leftover chicken from the night before that was seasoned with Mr. Dash (love that stuff!). I also had some hummus (recipe here) with broccoli and cauliflower! Again, super simple but filling, healthy and tasty!
And that’s all! Not sure if I will have a WIAW post next week as I will be on a trip but I have some long car rides ahead of me so you never know! Hope you have a great rest of the week!
