Have you cooked with broccolini before? It’s similar to broccoli, but has a longer stalk and smaller florets. I love roasting broccolini in the oven and really enjoy it paired with cremini mushrooms and chicken teriyaki. Traditional teriyaki sauce has A LOT of sodium. Like ALOT, almost 80% of your daily value in only 2 tbsp 😱. Thankfully, there are a few healthier options out there! Brands such as Mrs. Dash and Coconut Secret make a Teriyaki sauce that has good ingredients and minimal sodium. Making your own teriyaki sauce is also an easy and healthy option. I personally used the Coconut Secret teriyaki sauce for this recipe (there is no coconut taste!), but if you wanted to make your own, I would suggest this recipe.

Teriyaki Chicken roasted with broccolini and creamy mushrooms on one baking sheet makes the perfect, easy, go-to lunch idea!
Ingredients
- 2 chicken breasts, cut into 1-inch pieces
- 1/4 cup teriyaki sauce
- 8–10 pieces broccolini
- 3 cups cremini mushrooms, chopped into quarters
- 1 tbsp
- 1 tsp oregano leaves
- Pinch of salt
- 5–8 cherry tomatoes, sliced
- 2 tbsp green onion, chopped
- 1 tsp sesame seeds
Instructions
- In a bowl, marinate chicken in teriyaki sauce for about 20 mins.
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
- Add broccolini and mushrooms to the baking sheet and add olive oil, oregano leaves and salt.
- Add marinated chicken to the baking sheet and place in oven for 20 minutes.
- Remove from oven and add cherry tomatoes to baking sheet. Place back into oven for 10 more minutes.
- Remove from oven, place in bowl and top with green onion and sesame seeds.
Notes
This is a great recipe for batch cooking! Make on the weekend and portion out into containers for lunches during the week.
