Vegetarian Pad Thai

Description
Deliciously easy, and versatile Vegetarian Pad Thai recipe. Sweet, salty and sour flavours create the perfect balance of flavour in this dish.
Ingredients
- One 8 oz. pack pad thai brown rice noodles
- 1 tbsp olive oil + 1 tsp
- 2 garlic cloves, minced
- 1/2 medium onion, diced
- 1 red bell pepper, sliced
- 1 cup shredded carrots
- 2 tbsp soy sauce
- 1 tbsp coconut sugar
- Juice from 1/2 lime
- 1 egg, beaten
Garnish: cilantro, peanuts, lime
Instructions
- Prepare brown rice noodles according to packaging.
- Heat a pan with olive olive, and add garlic and onion for about 2 minutes. Add bell peppers and carrots for about 10 minutes to soften. Set aside.
- In a large pan, heat 1 tsp olive oil and add cooked noodles. Add soy sauce, coconut sugar and lime juice. Use tongs to toss everything together. Push noodles to one side, then pour the beaten egg into the pan and let it sit for about 30 seconds. Then toss everything together. The egg will help the noodles stick together.
- Add the cooked vegetables to the pan, tossing everything together. Remove from heat and garnish with chopped cilantro, peanuts and more lime juice if desired.
