How to cook this recipe
- Add potatoes to a large pot with water and bring to a boil. Cook for 8 minutes, until fork easily pokes through potato. Drain potatoes. I love using baby potatoes because they cook quickly. Use a trio baby potato medley pack for a variety of beautiful colours!
- Place potatoes, baby carrots, green beans and mushrooms on large baking sheet. Toss with olive oil, garlic, salt and pepper.
- Place in oven for 20 minutes at 425 degrees F.
Best served immediately after cooking.

Ingredients
- 1.5 lbs baby potatoes, sliced
- 2 cups baby carrots, sliced
- 2 handfuls of green beans, trimmed
- 1 cup mushrooms
- 2 tbsp olive oil
- 2 tbsp fresh garlic, minced
- 1/4 tsp salt
- pepper
Instructions
- Preheat oven to 425 degrees F.
- Add potatoes to a large pot with water and bring to a boil. Cook for 8 minutes, until fork easily pokes through potato. Drain potatoes.
- Place potatoes, baby carrots, green beans and mushrooms on large baking sheet and toss with olive oil, garlic, salt and pepper.
- Place in oven for 20 minutes.
Best served immediately after cooking.
