I am excited to announce a new series on my blog where I will be interviewing inspiring people within the health and fitness world. I thought what better name to give it than the Spotlight Series! Today marks the first post in the series and I thought who other than Christal from Nutritionist in the Kitch to kick things off! Christal is a holistic nutritionist that believes in incorporating whole foods into your daily routine {something we’re all about here at Exploring Healthy Foods!}. She provides one-on-one coaching, has an ebook, helpful guides and not to mention her vibrant blog is filled with amazing nutritious recipes.
Nutritionist in the Kitch has so many amazing health resources including
recipes, helpful tips and one-on-one holistic nutrition coaching. How did
it all begin?
It began about 3 years ago after I had been told by many friends and colleagues multiple times that I needed to start a blog! They were used to seeing me post pictures of my food on Facebook and thought it would be great to have the recipes. I decided I would give blogging a go and began Nutritionist in the Kitch. At first it was simply recipes but over the years it has evolved to contain advice on nutrition, my consulting services, posts on how I stay healthy while travelling, and more!
Have you always had a passion for healthy living?
In my teen years I often had stomach/digestive issues and as I got older I suspected it was related to my diet. As I began to change my diet I began to feel so much better and this sparked my passion which led me to go to school for nutrition!

Tell us about The Energy Boosting Guide
This guide is the newest in my Nutritionist in the Kitch Guides Series. I began the series as I wanted to outline the key nutrition points for certain areas of human health. The Energy Boosting Guide teaches the many ways that you can boost your energy levels naturally and in a healthy way through nutrition!
If you could give someone advice who’s looking to eat healthier, what
would you tell them?
Start slow, begin by swapping out white bread/pasta/rice with whole grains and take an inventory of the amount of refined sugars you are consuming on a daily basis. Look at ways to reduce sugar by choosing unsweetened foods, and sticking to naturally sweet foods like fruits to satisfy that sweet tooth. Also, increase your water intake to 3 litres per day!
What does a typical day look like for you?
I wake up and thank God for the day that is about to unfold as each day is truly a gift! Then I head down to my kitchen to make breakfast and spend some time in the morning checking emails and doing a daily devotional. I head to work and start seeing clients throughout the day. When I have breaks I make sure to update my social media channels, answer emails, and take time to catch up on things that need to be done. Mid day I head to the gym for a workout, then usually pop back to work for a couple more appointments. At home I’ll work on some blog posts (I usually make and photograph recipes over the weekends), and then I’ll make dinner with my Hubby and spend the evening relaxing or working on client plans. I try to hit the hay around 10pm for a good nights rest!

Who inspires you most?
Hmm, that’s a tough one. So many people inspire me! I’ve always been a big Jillian Michaels fan, she’s inspired me to push hard and make a difference in peoples lives by teaching them how to eat and be healthy!
If you could pick one food to eat over an over again, what would it be?
Oh gosh, an even tougher question! I LOVE eggs and eat them every day, but I also love fruit, all fruit, ummm… and I LOVE my dark chocolate. This is too hard… next! Lol!
