Today I wanted to share a recipe that is inspired by one of my other recipes I recently posted. My Avocado Pasta Salad that I shared a couple weeks ago has been one of my most viewed post and shared thousands of times on various recipe sharing sites. So with that, I take it people like a good healthy pasta salad recipe! ;)
I added a few extra ingredients to this recipe, including beans, corn and cherry tomatoes. The dressing is a creamy avocado spinach-basil pesto that goes perfect with this dish! You can use any kind of pasta but I really like the bow tie pasta because it’s different and fun! I definitely recommend whole grain pasta or a gluten-free alternative like quinoa pasta.
Typical pesto is made from basil, pine nuts, cheese and a few other ingredients. For this creamy avocado pesto we will be using avocado, basil, spinach, hemp seeds and nutritional yeast. You can easily alter this recipe if you want to just use basil {in place of the spinach} for a stronger basil taste. The nutrition yeast will give a light cheesy flavour and is a great source of vitamin B12.
Bow Tie Pasta Salad with Creamy Avocado Pesto

Description
This bow tie pasta salad with creamy avocado dressing makes the perfect lunch! Loaded with good carbs, beans, whole grains and more! Great vegetarian/vegan recipe!
Ingredients
- 3 cups bow tie pasta, cooked, see packaging for instructions {choose whole grain pasta or a gluten-free alternative}
- 1/2 cup black beans
- 1/2 cup corn
- 1/4 cup cherry tomatoes, sliced in half
- Dressing
- 1/2 clove garlic
- 1/2 avocado
- 1/2 cup basil
- 1/2 cup spinach
- 1 tbsp lemon juice
- 1 tsp hemp seeds
- 1 tsp nutritional yeast
- Pinch of salt
Instructions
- Begin by adding all dressing ingredients to high speed blender or small food processor until creamy consistency is reached.
- In a large bowl, combine cooked pasta, beans and corn.
- Then mix in pesto dressing and top salad with cherry tomatoes.
- Makes two good portions!
